Ingredients
1. Shrimp – 12 large
Salt and pepper – To taste
2. All purpose flour – 1/4 cup
Salt – 1/4 tsp
Pepper powder – 1/4 tsp
Paprika – 1/2 tsp
Garlic powder – 1/4 tsp
3. Panko bread crumbs – 1/2 cup
Unsweetened shredded coconut – 1/2 cup
4. Egg – 1, beaten
5. Oil – To deep-fry
6. Sweet chilli sauce
Method
1. Season shrimp with salt and pepper.
2. In a bowl, combine all purpose flour with all the other ingredients numbered 2.
3. Combine panko bread crumbs and unsweetened shredded coconut in another plate.
4. Working with one at a time, dip the shrimp in flour mixture, then in the beaten egg and finally in the coconut mixture, pressing to coat.
5. Deep-fry shrimp in 2 – 3 batches until golden brown and crisp, about 3 – 4 minutes. Serve immediately with sweet chilli sauce.
