Curd Semiya Recipe
Ingredients (Serves 3 – 4)
1. Roasted semiya – 1 cup
2. Oil – 1 tbsp
Mustard seeds – 3/4 tsp
Dried red chilies – 2, broken
Urad dal – 1/2 tsp
Cashews – 10, broken
Green chilly – 1 – 2, finely chopped
Curry leaves – A few
Ginger – 1/2 tsp, grated orminced
3. Carrot – 3 tbsp, finely chopped
Capsicum – 3 tbsp, finely chopped
4. Salt – To taste
5. Coriander leaves / clantro – 2 – 3 tbsp, chopped
6. Curd – Around 1 cup or as required
Method
1. Cook semiya adding enough water and drain well. Fluff with a fork while it is still warm else it will become very sticky. Transfer to a large bowl and stir in curd and salt, to taste when it cools down. Mix well
2. In a small pan, heat oil at medium heat. Splutter mustard seeds and fry dry red chilies, urad dal and cashews. Next add green chilies, curry leaves, ginger, chopped carrot and green capsicum. Cook for 1 – 2 minutes. Add this seasoning to the semiya mixture. Sprinkle chopped coriander leaves. Serve with pappadam, pickle, sundal (chundal), potato fry etc.
