Chicken (thighs preferred)\u00a0 \u2013 500 gm, cut into bite-sized pieces<\/p>\n<p>Ginger-garlic paste \u2013 1.5 tbsp<\/p>\n<p>Turmeric powder \u2013 1\/4 tsp<\/p>\n<p>Kashmiri chilly powder \u2013 1.5 tbsp<\/p>\n<p>Pepper powder \u2013 1\/2 tsp<\/p>\n<p>Garam masala \u2013 1 tsp<\/p>\n<p>Cumin powder – 1\/2 tsp<\/p>\n<p>Yoghurt \u2013 1.5 tbsp<\/p>\n<p>Lemon juice \u2013 1 tbsp<\/p>\n<p>Salt \u2013 To taste<\/p>\n<p>2. Egg \u2013 1\/2, beaten<\/p>\n<p>Corn flour \u2013 1.5 tbsp<\/p>\n<p>Rice flour – 1 tbsp<\/p>\n<p>3. Oil –\u00a0 For shallow-frying or deep frying<\/p>\n<p>4. Oil \u2013 1.5 tbsp (leftover oil from frying chicken)<\/p>\n<p>Cumin seeds \u2013 1\/4 tsp<\/p>\n<p>Ginger \u2013 1\/2 tsp, finely chopped<\/p>\n<p>Garlic \u2013 1 tbsp, finely chopped<\/p>\n<p>Green chilies \u2013 2 – 3, diagonally sliced<\/p>\n<p>Curry leaves \u2013 A few<\/p>\n<p>Chilly garlic sauce \u2013 2 tbsp<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>1. Marinate chicken pieces with all the ingredients numbered 1. Keep in the refrigerator for at least 2 hours or overnight. Take it out of the refrigerator half hour before frying.<\/p>\n<p>2. Add beaten egg, a pinch of salt, rice flour and corn flour to the marinated chicken. Mix well.<\/p>\n<p>3. Heat oil in a pan at medium-high heat and deep or shallow fry the chicken pieces in 2 \u2013 3 batches for about 5 \u2013 7 minutes or until fully cooked. Heat 1.5 tbsp oil in a pan over medium heat. Splutter cumin seeds and add ginger, garlic, green chilies and curry leaves. Cook for 1 – 2 minutes or until their raw smell disappears (do not brown). Add chilly garlic sauce and cook for a few seconds. Add fried chicken. Toss well. Cook for a minute. Switch off. Sprinkle chopped cilantro and serve immediately with onion rings and lemon wedges.
